High Protein Gluten Free almond and amaranth bread

This gluten free bread is rich in fibers and manganese, and a very good source of vitamin E (alpha tocopherol). Amaranth, an ancient grain that’s been cultivated in Mexico for thousands of years has some similarities.I’m loving every slice that comes from this new paleo diet friendly bread recipe.

High Protein Gluten Free almond and amaranth bread
Servings

Ingredients
  • 1 cup blanched almond flour (not almond meal)
  • 1 cup amaranth flour
  • 2 tbs coconut flour
  • 1/4 cup golden flex meal
  • 1/4 tsp celtic sea salt
  • 1/2 tsp baking soda
  • 5 large eggs
  • 1 tbs apple cider vinegar

  • 1 cup blanched almond flour (not almond meal)
  • 1 cup amaranth flour
  • 2 tbs coconut flour
  • 1/4 cup golden flex meal
  • 1/4 tsp celtic sea salt
  • 1/2 tsp baking soda
  • 5 large eggs
  • 1 tbs apple cider vinegar
Instructions
  1. Pulse almond flour, coconut flour, flax, salt, and baking soda in a food processor
  2. Pulse in eggs and vinegar, until combined
  3. Transfer batter to a greased 7.5 x 3.5 magic line loaf pan or 7.5 x 3.75 fox run pan
  4. Bake at 350° for 30 minutes
  5. Cool in the pan for 2 hours
  6. Serve
Recipe Notes

To store this easy Paleo Bread, wrap in a paper towel, seal in a plastic bag, and refrigerate for up to 1 week.
