This recipe has been a favorite of mine and I have tried to perfect it by adding more fresh herbs or spices. Here is my latest attempt which came out really well. If you are running out of ideas for dinners, here is a great Paleo recipe which is very easy to prepare and cook.

Ingredients
  1. 6 chicken pieces, skin removed
  2. 1/4 cup olive oil
  3. 2 large onions, thinly sliced
  4. 4 cloves garlic, minced
  5. 1 lb cremini mushrooms, wiped with a damp paper towel, trimmed and kept whole
  6. 1 28-oz can diced tomatoes, undrained
  7. 1/2 cup dry white wine
  8. 1tsb fresh thyme
  9. 1tsb fresh sage, chopped
  10. 1tsb fresh rosemary, chopped
  11. Salt and pepper to taste
Instructions
  1. 1. Rinse chicken and pat dry with paper towels. Preheat the oven broiler, and line a broiler pan with heavy-duty aluminium foil. Broil chicken pieces for 2 minutes per side or until browned.
  2. Transfer pieces to slow cooker.
  3. 2. Heat oil in a large skillet over medium-high heat. Add onions, garlic, and mushrooms and cook, stirring frequently, for 5 minutes, or until mushrooms begin to soften. Scrape mixture into the slow cooker.
  4. 3. Add tomatoes, wine, thyme, sage, and rosemary to the cooker, and stir well. Cook on Low for 6 to 8 hours or on high for 3 to 4 hours, or until chicken is cooked through, tender, and no longer pink. Season to taste with salt and pepper.
