I am getting so excited about the coming spring. This chicken meal is inherently delicate, and that quality is conveyed beautifully in this photo with accents  of pearl onion, asparagus and even Bibb lettuce.

Paleo Chicken with Spring Veggies

Ingredients
  1. 6 chicken thighs, skin removed
  2. 2 cups chicken stock or broth
  3. 3 tbs fresh parsley
  4. 1 tbs fresh thyme
  5. 1 tbs fresh tarragon
  6. 1 bay leaf
  7. 3 cloves garlic, minced
  8. 1 10-oz package frozen pearl onions, thawed
  9. 6 stalks asparagus, tough bottoms removed, cut into 1/2 - inch pieces
  10. 2 heads Bibb lettuce, trimmed and cute into quarters
  11. Salt and peppers to taste
Instructions
  1. 1. Rinse chicken and pat dry with paper towels Preheat the oven broiler, and line a broiler pan with heavy duty aluminium foil. Broil chicken pieces for 3 minutes per side, or until broiled.
  2. 2. Add stock, parsley, thyme, rosemary, tarragon, bay leaf, garlic, pearl onions, and asparagus pieces to the cooker, and stir well. Arrange chicken pieces in the slow cooker, and cook on LOW for 5 to 7 hours or on HIGH for 2 to 3 hours, or until chicken is almost cooked through.
  3. 3. If cooking on LOW, raise the heat to High. Add lettuce, and cook for another 30 minutes, or until lettuce is wilted, chicken is tender, and mixture is bubbling. Remove and discard bay leaf, and season to taste with salt and pepper.
