Alright I am not the worlds best photographer, sorry. This photo does not do how yummy this dish is any justice. What’s even better than the fact that is it super yummy and healthy is that is it sooooo easy!! Here ya go!
Paleo Uncut: Chicken Sausage, Sweet Potato and Apple Hash
1/2 (12- to 14-oz) package organic Italian chicken sausage, sliced 1/2 inch thick
1 organic medium apple, cored and diced
1 small organic sweet onion, diced
1 teaspoon organic chopped fresh thyme
1/4 teaspoon salt
1/2 (5oz) organic ackage baby spinach
Easy breezy gluten free bread
3 large eggs, lightly beaten
1 1/4 cups olive oil
3 cups almond flour
2 teaspoons baking powder
1/2 teaspoon, Himalayan salt (you may use sea salt)
1/2 tablespoons pastured butter (optional)
Place chopped sweet potato in a saucepan; add water to cover.
Bring to boil; cook 8 to 10 minutes or until tender.
Drain potatoes, and pat dry.
Melt 1 tablespoon extra virgin, cold pressed coconut oil or heat olive oil in a large stick skillet over medium-high heat.
Add sausage;cook 5 minutes or until browned.
Remove sausage from skillet, reserving drippings in pan. Melt remaining 1 tablespoon coconut oil or heat olive oil in skillet
Add apple, onion, thyme and salt; cook 5 minutes.
Add sweet potato. Reduce heat to medium; cook, stirring occasionally, 5 minutes or until potatoes are browned and crisp.
Add sausage and spinach to pan; cook 2 minutes or unil thoroughly heated and spinach wilts.
Preheat oven to 350F. Combine eggs and oil in a food processor (you can use a bowl). Combine eggs and oil in a bowl, stirring with a whisk. Add flour, baking powder and salt; stir until blended. Pour batter into a 13x9-inch baking dish rubbed with olive oil. Bake 18 minutes or until center is set. Cut into squares; serve with butter, if desired.
Note: Freeze leftover bread, or split bread and use for sandwitches.
